Smoked red jalapeño peppers in spices, vinegar, tomato sauce and ancho chiles. Great La Costena chipotle peppers! (pronounced "chee-POHT-lay"). CHIPOTLE PEPPERS A chipotle pepper is a red Jalapeño chile, ripened, dried, and smoked through a special process. Derived from the Aztec word meaning smoke, jalapeños are placed over huge pits and smoke is blown through tunnels running underground. Chipotle Characteristics - A unique warm heat and smoky flavor , chipotles are packed in a red adobo sauce made from lightly seasoned tomato broth. Embasa chipotles are completely shielded from all the elements during processing to produce an exceptional product. Tan - brown, veined and ridged, they are 5-10 cm (2-4 inches) long and 2.5 cm (1 inch) in diameter. Medium-thick fleshed, with a subtle deep rounded heat, they are excellent in sauces, soups, and as a seasoning for meats and stews.

Classic heat
I use these peppers all of the time. Chipotles are smoked, dried jalapenos and the canned kind are reconstituted in sauce. They are pretty hot, but you can add as little or as much as you want.

They are a real secret weapon that will impress your friends when cooking. You can even just chop them in the blender right out of the can and they serve as a great chili dip for chips. Throw in some diced onions and tomatoes and you have Chipotle salsa that even works as a marinade. Mix with mayo and ketchup and you have a chipotle mayo that is great on burgers on with fried fish. If you want to try some high cuisine you can mix them with cocoa and garlic to make mole. My favorite: I grind these chillies up, added lots of garlic, stew pork in it all, and add a pinch of rough cornmeal to finish.

These things really have no equal. I'm back in San Antonio now and I can get them anywhere, but when living in the Northeast the nearest store that carried them was 30 min away. I'm glad to see they can be ordered online.
